It’s fair to say that the folk of these fair isles love a good curry. It’s a staple in many cities, towns and homes across the country. If you’ve ever had white fish curry, chances are the fish was Tilapia. It’s a flaky white fish, holds flavour and is a great alternative to cod and haddock.
