Fish Kebab Skewers

If you're looking for a simple way to make seafood a little more exciting, these fish kebab skewers are a great place to start.

Chunks of fresh fish are threaded onto skewers with colourful peppers and red onion, lightly seasoned and grilled until the fish is tender and the vegetables are lightly charred.

They're quick to prepare, full of fresh flavour and perfect for a relaxed weekend dinner, BBQ or easy midweek meal.

🐟 Ingredients

For the kebabs:

  • 500g fresh fish pie mix
  • 1 red pepper
  • 1 yellow pepper
  • 1 red onion
  • 2 tbsp olive oil
  • 1 garlic clove, finely chopped
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ lemon
  • Salt and black pepper
  • Fresh parsley, to serve

To serve:

  • Warm flatbreads
  • Greek yoghurt or tzatziki
  • Fresh salad
  • Lemon wedges

🍳 Method

1. Prepare the vegetables

Cut the peppers and red onion into roughly even-sized chunks.

You want the vegetables to be large enough to thread onto the skewers without falling apart during cooking.

2. Season the fish

Place the fish pie mix into a bowl and add the olive oil, chopped garlic, smoked paprika and oregano.

Season with a little salt and black pepper, then gently toss everything together so the fish is evenly coated.

Finish with a squeeze of fresh lemon.

3. Build the skewers

Thread the pieces of fish onto skewers, alternating them with the peppers and red onion.

Try not to pack everything too tightly together, as a little space helps the heat circulate and gives the vegetables a chance to char.

If you're using wooden skewers, soak them in water beforehand to help prevent them from burning.

4. Grill the kebabs

Heat your grill or BBQ to a medium-high heat.

Place the skewers under the grill or onto the BBQ and cook for around 8–12 minutes, turning them regularly so they cook evenly.

The fish should be opaque and flake easily when cooked through, while the vegetables should be tender with lightly charred edges.

5. Serve

Transfer the kebabs to a serving plate and finish with fresh parsley and another squeeze of lemon.

Serve with warm flatbreads, tzatziki and a fresh salad for an easy Mediterranean-inspired meal.
