Mediterranean Sea Bass

This Mediterranean-style sea bass is a simple, fresh and flavour-packed dinner that's easy to prepare at home. Tender sea bass is oven-baked with juicy tomatoes, garlic, olives and fresh herbs, creating a light sauce that's perfect for spooning over the fish.

It's a great option for a relaxed midweek dinner, but simple enough to serve when you're entertaining too.

Ingredients

  • 2 fresh sea bass fillets
  • 200g cherry tomatoes, halved
  • 2 garlic cloves, thinly sliced
  • 75g Kalamata or black olives, pitted
  • 1 tbsp olive oil
  • ½ lemon, sliced
  • A handful of fresh parsley
  • A few sprigs of fresh oregano or thyme
  • Salt and black pepper

Method

1. Prepare the oven

Preheat your oven to 200°C / 180°C fan / Gas Mark 6.

Lightly drizzle a baking dish with olive oil.

2. Build the Mediterranean base

Add the halved cherry tomatoes, sliced garlic and olives to the dish.

Drizzle with olive oil and season with a little salt and freshly ground black pepper. Give everything a gentle toss to coat.

3. Add the sea bass

Pat your fresh sea bass fillets dry with kitchen paper and season with salt and black pepper.

Place the fillets on top of the tomatoes and olives, skin-side up if your fillets have the skin on.

Add the lemon slices and scatter over the fresh herbs.

4. Bake

Place the dish in the oven and bake for around 10–12 minutes, depending on the thickness of your fillets.

The sea bass should be opaque throughout and flake easily when gently pressed with a fork.

If your fillets have skin and you'd like it crispier, you can finish them under a hot grill for a minute or two.

5. Serve

Remove from the oven and spoon some of the warm tomatoes, olives and garlic over the sea bass.

Finish with fresh parsley and a squeeze of lemon.

Serve with crusty bread, roasted potatoes or a fresh green salad to soak up all those Mediterranean flavours.


What to Serve with Mediterranean Sea Bass

This dish already has plenty going on, so simple sides work best.

Try it with:

  • Crusty sourdough or ciabatta
  • Roasted new potatoes
  • Crispy smashed potatoes
  • A simple green salad
  • Steamed vegetables
  • Couscous

A drizzle of good olive oil and another squeeze of lemon just before serving brings everything together.

Don't overcrowd the baking dish. Giving the tomatoes and sea bass plenty of space helps everything roast rather than steam, bringing out the best flavour.

If your sea bass has skin, pat it thoroughly dry before cooking for the best chance of getting a lovely crisp finish.
